Recipe Information:


250g pitted Medjool dates
1 teaspoon bicarb soda
¾ cup boiling water
1 cup organic rolled oats
½ cup organic quinoa flakes
¾ cup wholemeal plain flour
1 teaspoon black chia seeds
1 teaspoon ground cinnamon
50g dried apricots, sliced
50g dried currants
150g butter



- Preheat oven to 180 degrees celsius (fan forced oven).
- Line slice tin with baking paper.
- Put dates, bicarb and butter in to tall mouli chopper container (or food processor) and pour over boiling water and set aside for 5 mins.
- In a large bowl add oats, quinoa, flour, cinnamon, apricots, currants and mix.
- Chop date and butter mixture with a mouli chopper and add to dry ingredients. Mix until combined.
- Press mixture into prepared tin and bake for 30 minutes.
- Cool in tin and cut into squares or fingers.
