Recipe Information:

1 cup organic rolled oats
1 cup plain flour
1 cup natural coconut (either dessicated or shredded)
3/4 cup brown sugar

125g butter

1 tablespoon golden syrup

1 teaspoon bi-carb soda

2 tablespoons boiling water

OPTIONAL:  Dried fruit e.g. mixed craisins, currants and chopped dried apricots or a handful of chopped dates.


  1. Combine dry ingredients. OPTION: add dried fruit at this stage
  2. Melt butter and golden syrup
  3. Mix bicarb soda and boiling water and add this water mixture to the butter mixture   
  4. Add wet ingredients to the dry ingredients and mix well
  5. Oven 150 degrees celcius -  bake flattened spoonfuls of biscuit mixture on a lined baking tray for 15-20 minutes until golden
  6. NOTE:  For chewy biscuits press the biscuits down with a fork halfway through cooking. For crunchy biscuits bake for at least 20 minutes. Allow biscuits to cool for 5 minutes on the tray before transferring to a cooling rack.
