Recipe Information:

The original cereal bar recipe is created by Super Healthy Kids.  Master Five renamed these cereal bars ‘little pillows’ as LTL used different ingredients to the original recipe to appeal to our family’s tastebuds and to work with what we had in the pantry.  Thank you Super Healthy Kids!

½ cup organic coconut oil
½ cup organic maple syrup (maybe a splash more)
1 egg
1 ¾ cups plain flour
¼ cup organic rye flour
1 cup organic rolled oats
1/3 cup natural desiccated coconut
1 teaspoon baking powder

Filling Mixture – fresh strawberries (see 'How to" via Super Healthy Kids), overripe banana, cacao nibs or your filling of choice

• Oven 180 degrees (fan forced)
• Line a baking tray
• Mix coconut oil, maple syrup and egg together
• In a separate bowl mix fours, oats, coconut and baking powder
• Add wet ingredients to dry and mix until dough comes together (Note: we used a splash more maple syrup at this point to allow for easy rolling out)
• Roll out dough and use a pizza wheel to cut to size
• Add SMALL amount of filling and fold over (LTL used ‘Super Healthy Kids’ strawberry filling recipe which is strawberries and a little water, LTL also used a small amount of overripe banana and a sprinkle of cacao nibs as fillings).

TIP: LTL used an egg flip to help fold over the pillow) and pinch sides to keep the filling intact. Don’t be tempted to overfill your pillows as the filling will spill out everywhere.

• Place onto baking tray and bake for 15-20 minutes. LTL cooked for 20 minutes until slightly golden brown and a little crunchy. Cook for 15 minutes if you want them a little softer.

TIP: With the left over dough LTL cut out heart shapes and pressed a finger into the centres and filled them with left-over strawberry mixture using a Sinchies pouch. LTL baked the hearts for 15-20 minutes. LTL is going to dip the bottom of these heart biscuits in melted organic dark chocolate for a special loving treat.

• Cool completely and enjoy.
