LTL Rainbow Cake

Cooking time: 40-45 mins
(Nut free and warning contains egg)

Recipe Information:

25g Butter

½ cup Caster sugar

2 Eggs

½ cup Milk

½ teaspoon Vanilla Extract

2 cups Self-Raising Flour

1/8 teaspoon Baking Powder

1 tablespoon Milk (extra)

Pink Food Colouring (recommend Hoppers natural colours)

2 tablespoons Cacao Powder

Icing (optional)

Method:• Preheat oven to 180 degrees celsius (fan forced oven).
• Prepare loaf tin.
• Cream butter and sugar then add eggs, one at a time and vanilla. Mix well.
• Fold in flour alternatively with the milk.
• Divide cake mixture into three bowls.
• Add cacao, baking powder and milk to one bowl.
• Leave one plain and stir in a couple drops of pink food colouring to the last bowl.
• Place spoonfuls of alternate colours into the prepared cake tin.
• Use the end of a dessertspoon and drag it through the colours making circle/swirl patterns.
• Bake for 40-45 minutes and cool completely on wire rack.
• LTL then iced with pink icing.
