Recipe Information:3 organic carrots, grated
3 free range eggs
½ cup brown sugar
½ cup organic coconut oil
1 teaspoon vanilla
1 tablespoon organic black chia seeds
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/3 cups self raising flour
½ teaspoon bicarb soda

(Optional Nuts – 1 cup chopped pecans)

Method:• Preheat oven to 180 degrees celsius (fan forced oven).
• Grease and line cake tin.

• Peel and grate carrots into a large mixing bowl.

• Add eggs and all other ingredients accept for the self-raising flour. Mix well. (N.B. I didn’t melt the coconut oil as I was in a hurry. I just made sure I mixed it through really well.)

• Add flour and then pour into prepared cake tin.

• Bake for 45 minutes until golden and cooked through. Cool on wire rack.


• Optional – Lemon Icing – 50g cream cheese, 30g butter (softened), 2 teaspoons of lemon juice (and finely grated lemon rind for stronger flavour), 2 cups icing sugar (sifted) – if icing is dry add a small amount of warm water or extra lemon juice to soften. LTL decorated with sunflower seeds, pepitas and dried apricots.
