LTL CHOC COCONUT ROUGH BISCUITS
Description:Prep: 10 minutes Cooking time: 12-15 minutes Warning – this recipe contains egg!
Oven 180 degrees celsius (fan forced)
Recipe Information:¾ cup self-raising flour
¼ cup organic cacao powder
2 cups natural desiccated coconut
¾ cup brown sugar
125 grams Nuttelex butter
2 tablespoons golden syrup
1 egg, lightly beaten
100-150 grams cacao nibs, chocolate chips, chocolate of choice chopped into bite-size pieces
Method: • Melt butter and remove from heat, mix in golden syrup and allow to cool slightly
• In a large bowl sift flour and cacao powder together
• Stir in coconut and brown sugar, mix well
• Add chocolate chips/nibs of choice and mix
• Add in lightly beaten egg, mix well
• Add in butter and golden syrup and mix until well combined
• Drop tablespoons of mixture onto a lined baking tray
• Bake in a moderate oven (180 degrees for fan forced) for 12-15 minutes or until golden brown
• Cool on a wire rack
NOTE: The original biscuit recipe adds the "chocolate of choice" in to the biscuits melted, so you could melt the chocolate with the butter if you wish to try them this way. Either way they will be a special and delicious treat to enjoy.
