Recipe Information:


1¾ cup self-raising flour

¼ cup plain four

½ teaspoon vanilla

1 teaspoon ground cinnamon

2/3 cup brown sugar

½ cup shredded natural coconut

1 cup milk

3 overripe medium bananas mashed

50g butter (room temperature)


  • Oven 180oC
  • Grease and line cake tin
  • Sift both flours and cinnamon
  • Stir in sugar and coconut
  • Combine milk, vanilla, butter and mashed banana and add to dry ingredients
  • Make a well in centre of dry ingredients and add wet ingredients and mix until just combined
  • Place mixture into prepared tin and smooth the surface
  • Bake for about 45-50 minutes or until cooked
  • Cool on wire rack.
