LTL CARROT CAKE BISCUITS

LTL CARROT CAKE BISCUITS

Makes 24.

Recipe Information:

 

1/3 cup coconut oil

1 cup organic rye flour

½ cup organic Quinoa flakes

1 ½ teaspoons ground cinnamon

1 teaspoon ground ginger

1 teaspoon baking powder

¼ teaspoon nutmeg

½ cup brown sugar

1 tablespoon ground linseed

1 large or 2 small ripe bananas mashed

1 carrot grated

½ cup rolled oats

½ cup of either pumpkin seeds or sunflower seeds

Optional -  ½ cup spelt puffs 


Method:

 

 

  • Mix all dry ingredients
  • Mix remaining wet ingredients (oil, banana, carrot)
  • Mix together. Shape mixture into balls and then flatten onto lined tray
  • Oven 180 degrees celsius and bake for 15 minutes until slightly golden
  • Remove from oven and stand on tray for 5 minutes before transferring to a wire rack to cool completely. (Suitable to freeze.)

Note:  You could dust with icing sugar or ice with lemon or cream cheese icing.
