Recipe Information:


1 cup wholemeal spelt flour (or plain flour)

1 teaspoon baking powder

1 teaspoon ground cinnamon

¾ cup brown sugar

1 tablespoon chia seeds

½ cup organic extra virgin coconut oil

2 ½ cups grated organic carrots



  • Grease and line cake tin. Oven 180 degrees celsius
  • Sift flour, cinnamon, baking powder
  • Stir in sugar, chia seeds and grated carrot
  • Make a well in centre add oil to dry ingredients. Mix until just combined
  • Place mixture into prepared tin
  • Bake for about 40 minutes or until cooked. Cool on wire rack.

NOTE: This cake was so yummy the kids did not even look for icing. Delicious! This recipe works well for mini muffins.
