HAM, CHEESE & VEG MINI MUFFINS

HAM, CHEESE & VEG MINI MUFFINS

(Nut free. Warning - contains egg)


Recipe Information:

 

300g self-raising flour

½ teaspoon mustard powder

½ teaspoon paprika

250ml milk

150g grated tasty cheese

Finely grated parmesan cheese (to sprinkle on top)

1 egg (LTL made these without egg substituting a splash of water)

50g room temperature butter

OPTIONAL: 6 slices of ham diced, half a carrot grated, half a zucchini grated - you can adjust ingredients to please your tastebuds

 


Method:

  • Oven 190 degrees celsius. Line mini muffin tray with papers.
  • Sift flour, mustard powder and paprika
  • Rub in butter
  • Add ham, cheese, carrot & zucchini
  • Stir in water OR egg and milk
  • Spoon mixture into muffin tray
  • Bake for 20 minutes. Remove from tray and cool.
