Recipe Information:


2 cups plain flour
1 teaspoon baking powder
1/3 cup caster sugar
1/3 cup organic coconut oil, melted
1 cup milk
1 tablespoon organic cacao powder (for chocolate muffins) or 1 teaspoon organic vanilla paste (for plain muffins)

1 egg - optional



  • Oven 180 degrees celsius
  • Whisk oil and sugar - and egg (if using)      
  • Shift in flour, baking powder and cacao powder/vanilla paste
  • Add milk and whisk
  • Pour mixture into muffin tray lined with papers. This mixture makes six large muffins. (Aussie muffin papers and flags shown in this LTL lunchbox were $2 from The Reject Shop.)
  • Bake for 20 minutes until set. Cool and ice.


  • Lamington Icing: ¾ cup icing sugar, 2 tablespoons cacao powder, 1 teaspoon melted organic coconut oil, 2 teaspoons of boiling water – add a tablespoon of water at a time to your preferred consistency – you may want more or less water and then sprinkle with natural dessicated coconut.
