Recipe Information:


1 cup self-raising flour

¼ cup caster sugar

½ teaspoon ground cinnamon

1 egg

40g butter - melted

¼ cup milk

1 mashed banana

Small handful of organic currants / sultanas / cacao nibs / choc chips

Optional - dried banana chips / choc chips for top of muffin



Makes approximately 18-24 mini muffins (depending on size).

Line mini muffin tray with mini muffin papers.

· Oven 180o (fan forced)

· Sift flour, sugar and cinnamon

· Combine eggs, milk and butter, mashed banana and add to dry ingredients – mix until just combined

· Add currants / sultanas / cacao nibs / choc chips

· Place mixture into mini muffin tray

OPTIONAL · Top each muffin with a dried banana or choc chip or leave plain

· Bake for about 20-25 minutes or until cooked. Cool on wire rack.
