PASSIONFRUIT & COCONUT MUFFINS/CAKE

PASSIONFRUIT & COCONUT MUFFINS/CAKE
Prep: 15 mins
Cooking time: Muffins 25 mins / Cake 35-40 mins
Nut free - Warning contains egg)


Recipe Information:

2 ½ cups self raising flour

¾ cup caster sugar

90g butter, melted

3 eggs

¾ cup milk

5 or 6 fresh passionfruit (extract juice)

1/3 cup natural desiccated coconut

Extra coconut for sprinkling


Method:Preheat oven to 180 degrees celsius

Whisk butter, sugar, milk, eggs, passionfruit juice in a bowl
Add coconut and sifted flour and mix until just combined

MUFFINS - Spoon mixture into 12 greased and lined muffins tins

CAKE - Spoon mixture into greased and lined loaf tin

Sprinkle with extra coconut (optional)

MUFFINS - Bake for 25 minutes or until golden. Makes 12.

CAKE - Bake for 35-40 minutes or until golden.

Cool completely before storing.

 

Note - The cake and muffins can be enjoyed with passionfruit icing, a dust with icing sugar, enjoyed as is or if you find it a little dry serve with butter.
