Recipe Information:2 medium zucchinis, grated
3 eggs, beaten
1 cup brown sugar
1 cup coconut oil, melted
¼  cup Medjool dates, chopped
¼ cup pecans (or preferred nut) chopped - optional

1 ½ cups self-raising flour, sifted
1 ½  cups organic rye flour
½  teaspoon fresh ground nutmeg 


  • Oven 180 degrees celsius
  • Grease and line large loaf/cake tin
  • Melt organic coconut oil over low heat and set aside to cool slightly
  • Grate zucchinis into a large bowl
  • Add eggs and sugar to zucchini and mix
  • Add dates, pecans, flours, nutmeg and oil and gently mix through
  • Bake in oven for about 1 hour or until cooked. Stand loaf in tin for 5 minutes then turn out and cool on wire rack.
