SUGARLESS BANANA AND DATE LOAF

SUGARLESS BANANA AND DATE LOAF

(Nut free and option for egg free)


Recipe Information:

1 cup of medjool dates, remove seeds and chop

1 cup milk

1 teaspoon baking soda

1 cup wholemeal flour

1/2 cup plain flour

1 teaspoon baking powder

100g butter

1 egg - or for egg free loaf omit egg and add a splash of water

2 ripe bananas, mashed

 


Method:

  • Grease and line cake tin. Preheat oven 180 degrees celsius.
  • Place chopped dates, milk and soda in a pot and once simmering over a medium heat add in butter. Turn off heat once butter has melted and set aside.
  • In a large bowl mash bananas and mix in egg or water.
  • Sift flours and baking powder.
  • Make a well in centre add date mixture to dry ingredients. Mix until just combined.
  • Place mixture into prepared tin.
  • Bake for about 40-45 minutes or until cooked. Cool on wire rack.
